Game returns on Friday 15th + Saturday 16th September

Since opening way back in April 2014, we've seen a few dozen guest chefs from all across the world come into our kitchen and join us for our monthly Guest Series dinners - and once a year, for what is our most exciting event: Game. It's on these occasions that James and an invited party of chefs return to Lyles, fresh from a shooting trip in Scotland, with their take on how to serve the best of British game, in new and sometimes unconventional ways.

Game has resulted in some unforgettable dishes, making the most of the chefs' global influences, traditions and approaches - you won't find any grouse with bread sauce on these menus. Last year's dishes included Girolles & Grouse Waffle from Rafa Costa e Silva (Lasai, Rio de Janeiro); Chongqing Fried Pheasant by Angela Dimayuga (Mission Chinese Food, NYC); Mallard ‘Hualien’ Style, Satsivi & Hazelnuts from Luke Burgess (Australia); and Grilled Chestnut Ice Cream & Hare Blood Chocolate by our very own James Lowe.

For Game 2017, James will be taking another great team of chefs to the heather-clad hills and fertile farmland of The Cairngorms, in Scotland's Eastern Highlands.

This year we have Victor Liong (Lee Ho Fook, Melbourne), Lisa Lov (Tigermom, Copenhagen), David Posey (Elske, Chicago), Petter Nilsson (Spiritmuseum, Stockholm), Trevor Moran who’s in the process of opening in Nashville, and James Lowe from Lyle’s.

Up in Scotland, the team will participate in a deer stalk and duck shoot, as well as an afternoon of fly-fishing salmon on the River Dee. It’s a chance for them to see first hand what’s involved in bringing these incredible ingredients to our table.

Once the team returns to London, only two days before the dinners on Friday 15th and Saturday 16th September, they’ll start developing their dishes. For some of them, it will be the first time that they prepare game like this. The resulting menus - which are only revealed on the nights themselves - differ each night, with the chefs rotating between courses.

Drinks-wise, we'll have some wines on the list that complement game nicely, and our friend Ryan Chetiyawardana aka. Mr Lyan of Superlyan and Dandelyan, World’s Best Cocktail Bar, is designing aperitivo cocktails with our Scotch Whisky partner, Craigellachie Single Malt Scotch Whisky.
