Jeremy Fox, Californian master of vegetables and five-time James Beard Award nominee is coming to London, and we’re beyond excited to welcome him into our kitchen on Tuesday 14th and Wednesday 15th August.
Jeremy is one of America's most talked-about chefs, celebrated for the ingredient-focused cuisine he serves at his Los Angeles restaurant, Rustic Canyon Wine Bar. With his first cookbook ‘On Vegetables’, which was published last year, he’s redefined vegetable-based cuisine with global appeal.
At Rustic Canyon, Jeremy crafts a daily-changing menu that embraces hyper-seasonality and simplicity. The menu is inspired by ingredients from the nearby Santa Monica Farmers’ Market and other local purveyors. While many dishes are fleeting, like Zuckerman’s Asparagus with cultured cream, steamed egg, breadcrumb and Castelvetrano olive, some have become celebrated signatures like the Hope Ranch Mussels Pozole Verde with Rancho Gordo hominy, poblano, radish and tortilla and the Thao’s White Yams with garlic butter, aioli, celery, pickled onion and benne seed za’atar.
Here at Lyle’s we’re all huge fans of his book and are looking forward to showing him the best summer produce Britain has to offer and working on a collaborative menu with him.
