The Guest Series with Mat Lindsay

The second instalment of this year’s Guest Series welcomes Sydney’s Mat Lindsay on Thursday 3rd and Friday 4th October.

Something of a Sydney legend, Mat’s first restaurant, Ester, opened in 2013, just one year before Lyle’s. He has since opened the perfect wine bar - Poly - and AP Bakery. He first cooked at Lyle’s in 2015 during our Game event and we’re so excited to bring him back to show off some of the classics that he’s created over the last 10 years.

Ester has become an institution in Australia, its influence also felt far overseas. Led by its signature wood-fired cooking and sharing plates, Ester - and Mat’s food in general - is underpinned by a belief in generosity, mindfulness, and the importance of a good time. At Lyle’s, these values will meet peak seasonal, local produce, supplied by our friends at Shrub.

You can expect Mat’s interpretations of some of the best of British ingredients - such as bluefin tuna and mallard - given the same creative flair seen in his cult favourites of blackened cauliflower heart with almond sauce and mint, and fish sauce-seasoned beef tartare.

The Guest Series with Mat Lindsay, in collaboration with The Macallan and with support from Shrub, will take place at Lyle’s on Thursday 3rd and Friday 4th October.
