The Guest Series with Mathieu Rostaing-Tayard

The first segment of this year’s Guest Series concludes with the acclaimed French chef Mathieu Rostaing-Tayard.

Mathieu is the chef behind Sillon restaurant in Biarritz and its sister wine bar MicroSillon in Lyon. Having first cooked with James in the Guest Series back in 2017, Mathieu’s return to the Lyle’s kitchen is a source of great excitement for us all.

We’ve been following Mathieu’s food since the original Cafe Sillon in Lyon, he’s easily one of the best French chefs of the last 15 years. His food is creative, daring, original, and always interesting.

After closing Sillon in Biarritz last month we look forward to cooking with Mathieu before he launches his next project, in his words “a Basque-inspired restaurant with Lyonnaise roots”, which will reside next door to MicroSillon in Lyon.

This November you can expect Mathieu’s signature style with dishes like spiced corn crackers, squid with white onions, tuna with preserved fig, and crispy pig’s feet with bottarga.

For those who have not yet shared in the joy of Sillon and Mathieu’s cooking, we look forward to welcoming you all to Lyle’s to experience it in the coming weeks.

The Guest Series with Mathieu Rostaing-Tayard, in collaboration with The Macallan and with support from Shrub, will take place at Lyle’s on Wednesday 13th and Thursday 14th November.

Tickets are priced at £135 - available to purchase here - including a seven-course menu and a welcome drink. There will also be a limited wine list, featuring bottles and a pairing suggestion, available to choose from on the night.
