Mathieu Rostaing-Tayard of Lyon’s Cafe Sillon is taking on the April instalment of The Guest Series. He will be cooking for one night only on Monday 24th April.
Born in Lyon, Mathieu started cooking school at the age of 14. He worked in Michelin starred kitchens in France and London including Pierre Gagnaire and Nicolas Le Bec. Back in Lyon he opened his first restaurant - 126 - at only 26 years old. His cooking got rave reviews and the small neo-bistro became the go-to place for locals and chefs. After two successful years, Mathieu sold the restaurant to go travelling around the world. He visited Japan, Nepal, India, Peru, Canada and Italy, giving him the opportunity to work with Massimo Bottura and Virgilio Martinez.
In 2014 he opened Café Sillon where he turns out inventive and market-driven dishes from a small kitchen. His three course menu is beautifully simple, and changes once a fortnight. He shies away from cooking the ingredients of France’s “Grand Cuisine” like Poulet de Bresse and Foie Gras. Instead he focuses on more humble ingredients like tripe, cardoons and mackerel to create menus that are insanely good value for the level of cooking. A year after opening he won ‘Best Bistro’ in the 2015 Le Fooding guide and is now helping to add a new dimension to the dining scene in Lyon.
